An intracellular enzyme produced under controlled fermentation of Escherichia coli K-12JAl98, containing the bovine prochymotrypsin A gene. Prothrombin is released after cell rupture, and then is obtained by centrifugal separation or membrane concentration and washing with buffer. The remaining cell fragments are treated with acid to inactivate them, then the rennetase is dissolved in a buffer solution, and the solution is filtered after adjusting the pH value. The renogen tyrosinase is activated by acid treatment, then fully purified by anion exchange chromatography and eluted with a buffer salt solution.
