You didn’t specify if it was copper(I) nitrate [CuNO3] or copper (II) nitrate [Cu(NO3)2] so I will do the equation for both. The products are copper (I) hydroxide [CuOH] or copper (II) hydroxide [Cu(OH)2] and sodium nitrate (NaNO3). Both of these are double displacement reactions, where both reactants, in essence, change their partners.

CuNO3 + NaOH → CuOH + NaNO3

Cu(NO3)2 + 2 NaOH → Cu(OH)2 + 2 NaNO3

First, please note that this reaction has very little practical value…I will get back to this. The reaction that occurs is shown below:

Cu(NO3)2 (aq) + 2NaOH (aq) = Cu(OH)2 (s) + 2NaNO3 (aq)

(aq = means that it is in solution, aquesous, s - means that it is a solid). So, when you mix a solution of copper nitrate (light blue solution) and sodium hydroxide (clear solution) you will see a light blue precipitate form (Cu(OH)2) and NaNO3 in solution. It is a reaction that is useful for demostrationg a reaction, not much else.
