I put salt on the outside of Backed Potatoes. A coating of oil and salt makes the skin crispy and tasty.

How do restaurants make a baked potato so quickly? At home it takes close to an hour or a little more in the oven, and 45 mins on the BBQ.

Spuds are one of the cheapest ingredients out there. You can cook a load in advance and then warm them or keep them on point for service. From memory, a full 56lb bag at the farm gate is about £12.00. All you need to do is wash, stab, oil and season them. Cook a mass of them at low heat and keep them warm for service. They hold heat very easily, like thermal batteries.
