Acetic acid doesn’t have be used as a solvent in that reaction. Many different types of solvents can be used —and acetic acid is one of them.

However, keep in mind that when aniline is dissolved in acetic acid (even without acetic anhydride), a reaction will occur between the two to generate anilinium acetate and heat will be released. So, if you are planning to do this reaction in acetic acid, be aware that the solution will get hot as that reaction occurs even before you add acetic anhydride.

So the reason why Acetic acid is used is to polarise the Bromine molecule to bromine atoms with first of all partial negative and positive charge and finally formation of +ve and -ve bromine atom. Proteins that replicate DNA and repair damaged genetic material are created directly by acetylation. Acetylation also helps in DNA transcription. Acetylation determines the energy that proteins use during duplication and this determines the accuracy of copying the genes.
