Dear Wei Zhang . It is as emulsifying agents for the preparation of stable oil-in- water emulsions. Also, it has been used in pre- extraction of membranes to remove peripheral proteins (used at 2% for extraction of membrane- bound proteins). Dear Wei Zhang,
The role of Tween 20 in enzyme reaction depends on the type of enzyme and substrate. For example,
  • Tween 20 improves the enzymatic hydrolysis of pretreated substrates.
  • Tween 20 modifies lignin surface properties (change its hydrophobicity, hydrogen bonding ability and surface charges, thus reducing the non-productive adsorption of proteins.) and improve the enzyme activity.
  • Tween 20 could well block the lignin–cellulase interactions recovering cellulose hydrolyzability.
If you determine the type of your enzyme and substrate, it could be possible to explain the effect of Tween 20.
