The analysis of almond oil composition mainly uses gas chromatography, liquid chromatography and gas chromatography-mass spectrometry. Yan Zhongli et al. analyzed the fatty acid composition in almond oil by GC/MS. The results showed that there are 11 kinds of fatty acids in almond oil, mainly 63.39% oleic acid and 28.79% linoleic acid. The content of unsaturated fatty acids reached 95.54%. Analysis by Kong Lingming and others showed that among the unsaturated fatty acids contained in almond oil, oleic acid, linoleic acid and linolenic acid accounted for 96.64% of the total fatty acids.
