Guar gum

Guar gum is obtained from the endosperm part of Cyamposis tetragonolobus seeds after removing the skin and germ. After drying and grinding, water is added, pressure hydrolysis is carried out and precipitation is made with 20% ethanol. After centrifugation, the endosperm is dried and crushed. Guar gum is a nonionic galactomannan extracted from the endosperm of guar bean, a leguminous plant. Guar gum and its derivatives have good water solubility and high viscosity at low mass fraction.
1. In cold drinks such as ice cream, ice cream, frost, play a good role as stabilizer, prevent the formation of ice crystals, play a thickening and emulsifying role.
2. It plays an excellent role in preventing bonding, retaining water, increasing gluten strength and maintaining quality of noodles such as noodles, noodles, instant noodles and noodles, and prolongs shelf-life.
3. In beverages such as peanut milk, almond milk, walnut milk, granular orange, fruit juice, fruit tea, various solid beverages and Babao porridge, it plays the role of thickening water holding and stabilizing agent, and improves the taste.

Aqueous guar gum dispersions have a buffering action and arestable at pH 4.0–10.5. However, prolonged heating reduces theviscosity of dispersions.
The bacteriological stability of guar gum dispersions may beimproved by the addition of a mixture of 0.15% methylparabenand 0.02% propylparaben as a preservative. In food applications,benzoic acid, citric acid, sodium benzoate, or sorbic acid may beused.
Guar gum powder should be stored in a well-closed container ina cool, dry place.
