Introduction:
Lycopene is a member of the carotenoid family of chemical substances.Lycopene,
similar to other carotenoids,is a natural fat-soluble pigment(red,inthecaseof
lycopene)found in certa in plants and microorganisms,where it serves as an accessory
light-gathering pigment and to protect the seorganismsagainstthetoxiceffectsof
oxygenandlight.Lycopenemayalsoprotect humans against certaindisorders,such
as prostate cancer and perhaps some other cancers,andcoronaryheartdisease.
Carotenoidsaretheprincipalpigmentsresponsibleforthecolorsofvegetablesand
fruits(seeBeta-CaroteneandLuteinandZeaxanthin).Lycopeneisresponsibleforthe
redcolorofredtomatoes.Inadditiontotomatoes(Lycopersiconesculentum)and
tomato-basedproducts,suchasketchup,pizzasauce,tomatojuiceandtomatopaste,
lycopeneisalsofoundinwatermelon,papaya,pinkgrapefruitandpinkguava.
Processedtomatoproductsaremoreavailabledietarysourcesoflycopenethanfresh
tomatoes.Theaveragedailyintakeoflycopeneisapproximately25milligrams,with
50%ofthisintheformofprocessedtomatoproducts.
Lycopeneisanacyclicisomerofbeta-carotene.Beta-carotene,whichcontains
beta-iononeringsateachendofthemolecule,isformedinplants,includingtomatoes,
viatheactionoftheenzymelycopenebeta-cyclase.Lycopeneisa40carbonatom,
openchainpolyisoprenoidwith11conjugateddoublebonds.
