Introduction

Malic acid, also known as hydroxybutyric acid, has three forms due to the presence of an asymmetric carbon atom: L-malic acid, D-malic acid, and DL-malic acid. L-malic acid is a product in the tricarboxylic acid cycle in the human body, so the human body can only metabolize L-malic acid. The natural forms of L-malic acid exist in fruits such as apples, grapes, and lemons. Extracting it from fruits has low content and high cost, making it impossible to be produced industrially in large quantities. The production of DL-malic acid can only be catalyzed by Chemicalbook (fumaric acid) and is DL-malic acid. Since the human body cannot metabolize DL-malic acid, although some countries in Europe and America allow DL-malic acid to be used as a food additive, people always have a sense of insecurity. Microbial methods produce all L-malic acid, so the currently used malic acid is all produced by microorganisms. In food and medicine, the malic acid used basically replaces DL-malic acid with L-malic acid.

Malic acid is stable under normal conditions and is hygroscopic when the humidity is high. It is a triclinic white crystal. It is soluble in methanol, ethanol, acetone and many other polar solvents.

The food industry uses it as an acidulant, color-retaining agent, preservative and emulsifying stabilizer for egg yolks, etc., and also for pharmaceuticals.
