Introduction
Deoxynivalenol is mainly produced by Fusarium graminearum (F.graminearum) and Fusarium culmorum (F.culmorum), and its content is high in grains such as wheat, barley, oats, and corn. Cereal deoxynivalenol contamination is prone to occur frequently around the world. The main reason is that grains are infected by fungi such as Fusarium graminearum in the field, causing wheat scab and corn ear rot. Under suitable temperature and humidity conditions, they reproduce and produce deoxynivalenol.

Chemical properties
DON can bind to the active center of the peptidyl transferase of the 60s subunit of the ribosome to trigger the ribosome stress response, inhibit the synthesis of DNA, RNA and protein, induce cell apoptosis, etc., damage the intestines and immune system, and has genetic toxicity, which has a serious impact on the health of humans and animals. It is a fungal toxin with the highest detection rate and excess rate in human and animal food.

Biological activity
Deoxynivalenol, a trichothecenes family fungal toxin, crosses the intestinal mucosa via a paracellular pathway at tight junctions. Deoxynivalenol transport is not affected by P-glycoprotein (PgP) or multidrug resistance-related protein (MRP) inhibitors.
