Description

Fumonisic acid is a toxin produced by the yeast rice flour subspecies of the genus Pseudomonas cereus that can cause food poisoning. As one of the toxins produced by the pathogens of yeast rice flour poisoning and Tremella poisoning, it has strong biological activity and is the main toxic metabolite of Pseudomonas cereus that causes food poisoning and death. Fumonisic acid is basically tasteless and difficult to detect. It is extremely heat-resistant. Even boiling it with 100°C water or steaming it in a pressure cooker cannot destroy its toxicity. It can cause poisoning after eating. At present, there is no specific antidote for fumonisic acid. Once poisoned, the mortality rate is as high as 40% to 100%.
