Glucose isomerase. It is an enzyme that catalyzes the isomerization of glucose and converts glucose into fructose. In industrial production, it is often used to produce high fructose syrup, which is widely used in the food and beverage industry to sweeten. For example, in the production of some soft drinks and fruit juice drinks, glucose isomerase is used to produce the required sweetener.

Near white to pale tan or brown or pink amorphous powder, granule or liquid. Soluble in water (granules are insoluble in water), insoluble in ethanol, chloroform and ether. The main enzyme of Isomerase, glucose is glucose (or xylose) isomerase. The optimum pH is 6 to 8. Manganese and potassium can improve heat resistance. The optimum temperature is 40 to 65°C (60°C).
