Description

1. In petroleum industry drilling, a 0.5% xanthan gum aqueous solution can maintain the viscosity of water-based drilling fluids and control their rheological properties. It keeps the viscosity very low at the rapidly rotating drill bit, significantly saving power consumption, while maintaining high viscosity in relatively static parts of the borehole, helping to prevent wellbore collapse and facilitate the removal of cuttings. 2. In the food industry, it is superior to currently used food additives such as gelatin, CMC, alginate, and pectin. Adding 0.2%–1% to fruit juice gives it good adhesion, pleasant taste, and helps control seepage and flow. As a bread additive, it improves stability, smooths texture, saves time, and reduces costs; when used at 0.25% in bread fillings, food fillings, and candy coatings, it enhances taste and flavor, provides smooth product texture, extends shelf life, and improves product stability under heating and freezing. In dairy products, adding 0.1%–0.25% to ice cream gives excellent stabilization; in canned foods, it provides good viscosity control and can replace part of the starch, with one part xanthan gum substituting for 3–5 parts starch. Furthermore, xanthan gum is also widely used in candies, seasonings, frozen foods, and liquid foods.
