Description

Monosodium citrate, also known as sodium dihydrogen citrate, is an acid salt of citric acid with the chemical formula NaH₂C₆H₅O₇. It appears as a white, crystalline powder that is highly soluble in water and practically insoluble in ethanol. The compound has a slightly acidic taste and a pH of 3.5–3.8 in a 5% aqueous solution. Monosodium citrate is less hygroscopic than citric acid, making it less prone to caking and preferred in dry formulations.
