Description

Hexyl butyrate has a characteristic fruity (apricot) odor and sweet taste suggestive of pineapple. Hexyl Butyrate is a liquid with a powerful fruity odor. It has been identified in a number of fruits and berries and is an important constituent of fruit flavor compositions.

Hexyl butyrate is a fatty acid ester obtained by the formal condensation of hexanol with butyric acid. It has a role as an animal metabolite. It derives from a butyric acid and a hexan-1-ol.

It is formed by esterification of butyric acid and n-hexanol in the presence of hydrochloric acid.

Uses

GB 2760-96 stipulates the allowable food flavors. The main role is to prepare pineapple, apple, citrus, melon, kiwi, pear and strawberry flavors.
