Overview:

Resveratrol is a kind of non-flavonoid polyphenol compound that is antitoxin produced by many plants when being stimulated. It can be synthesized in grape leaves and skins and is the bioactive ingredient in wine and grape juice.

Pure resveratrol appears colorless acicular crystals, tasteless, insoluble in water, easily soluble in ether, chloroform, methanol, ethanol, acetone, ethyl acetate and other organic solvents, with a melting point of 256-258 ℃ and a sublimation temperature of 261 ℃. In case of exposure to alkaline solution such as ammonia, it turns red; and chromogenic reaction occurs if it is exposed to ferric chloride-potassium ferricyanide. This property is helpful in identification of resveratrol.

Natural resveratrol has both cis and trans structures. It mainly exists in the trans conformation in nature. Both structures may be combined with glucose to form cis and trans-resveratrol glycosides. Cis and trans-resveratrol glycosides under the action of intestinal glycosidases can release resveratrol. Under the action of UV, trans-resveratrol can be converted into cis-isomer.
