Description

Licorice (or Liquorice) is the common name of Glycyrrhiza glabra, from the root of which a sweet, aromatic flavouring can be extracted. Much of the sweetness in licorice comes from glycyrrhizin, which has 30–50 times the sweetness of sugar. By the 20th century, manufacturing allowed the root to be stripped for pharmaceutical uses and then extracted for candy sweetener.

1.What Is Glycyrrhizin (Glycyrrhizinates)?

Glycyrrhizin (or glycyrrhizic acid / glycyrrhizinic acid) is the chief sweet-tasting constituent of Glycyrrhiza glabra (liquorice) root. Structurally, it is a saponin used as an emulsifier and gel-forming agent in foodstuffs and cosmetics.

2.Glycyrrhizin is obtained as an extract from licorice root after maceration and boiling in water. Licorice extract (glycyrrhizin) is sold in the United States as a liquid, paste, or spray-dried powder. When in specified amounts, it is approved for use as a flavor and aroma in manufactured foods, beverages, candies, dietary supplements, and seasonings.
