Sodium benzoate, an organic compound, the sodium salt of benzoic acid, also known as sodium benzoate. Mostly white granules, odourless or with a slight benzoin odour, slightly sweet, astringent, soluble in water and ethanol, glycerol, methanol, density 1.44 g/cm3, melting point 122.4°C, boiling point 249.3°C (101.325 dry Pa at atmospheric pressure), refractive index 1.504.
Sodium benzoate is mostly white granules, odourless or with a slight benzoin smell, slightly sweet taste, astringent; easily soluble in water (room temperature) 53.0g/100ml or so, PH at about 8; sodium benzoate is also an acidic preservative, no bactericidal or antibacterial effect in alkaline media; its best PH for preserving is 2.5-4.0, and the bactericidal effect of 5% solution at PH 5.0 is not very good. Sodium benzoate is lipophilic and easily penetrates cell membranes to enter cells, interferes with the permeability of cell membranes and inhibits the absorption of amino acids by cell membranes; it enters cells to ionize and acidify intracellular alkali stores and inhibits the activity of cellular respiratory enzymes and prevents the acetyl coenzyme A condensation reaction, thus serving the purpose of food preservation.
