Isomalt, also known as palatinol, is a sugar substitute or sugar alcohol made from sugar beets. Although naturally derived, this compound is often considered a man-made product due to the extensive chemical manipulation that it undergoes. It is most often used in commercial food production and is labeled "sugar-free" on product labels. Isomalt has been widely used as a preservative because it can extend the shelf life of certain products. This compound has a more complex chemical composition than natural sugars. Its molecular formula is C12H24O11, which is two disaccharides with independent bonds in a crystalline structure.

Application

As a sweetener: By far, the most common use of isomalt is as an additive to "sugar-free" candies, cough drops, and other commercial foods. It's about as sweet as natural sugar, but without the glycemic and caloric concerns. Of course, this substitute isn't completely caloric-free, but it's only about half as caloric as sugar. As a result, it can't be used in zero-calorie products. It also improves the taste of many toothpastes because it doesn't cause tooth decay like sugar. Although it doesn't bake or react like sugar, other nonsugar sweeteners, such as sucralose, are sometimes mixed with isomalt to give it a sugar-like sweetness. For example, it doesn't dissolve as quickly, doesn't look or taste the same, and some forms designed for baking are actually bitter. The compound is often processed into granules with chemicals such as acesulfame potassium, so it tastes unpleasant when ingested alone.

As a preservative: This substance can also extend shelf life and is sometimes used in products such as breakfast cereals, cookies, baked breads, and muffins. It has a tendency to stabilize other ingredients and prevent mold and spoilage, and it keeps dry foods fresh and crisp longer.
