What is Lactitol ?
Lactitol is a 12-carbon sugar alcohol that can be obtained by hydrogenation of lactose through a catalyst. It is available in anhydrous form and in two products containing a combined water. It has a sweet and refreshing taste, and is often used in combination with high sweetness sweeteners. It has no aftertaste, low moisture absorption, and high solubility. Its relative molecular weight is similar to sucrose, and its impact on water activity is similar to sucrose. It is stable under acidic and alkaline conditions, and is also very stable under high temperature conditions in food processing. Appearance: lactitol is white crystal or crystalline powder, or colorless liquid. Odorless and sweet in taste, with a sweetness of 30% to 40% of sucrose and a calorie content of about half of sucrose (8 4kJ/g).
Structure: the chemical essence of lactitol is 4-O- β- D-galactopyrano-D-sorbitol, its molecular formula is C12H24O11, and its molecular weight is 344.32. Crystallized lactitol mainly has two forms: lactitol dihydrate and lactitol monohydrate, and another lactitol commodity is lactitol solution containing 54% of lactitol.
Melting point: 146 ºC for lactitol anhydrous, 94~97 ºC for monohydrate, 70~80 ºC for dihydrate. Hydrates gradually lose moisture when heated above 100 ºC, and intramolecular dehydration occurs above 250 ºC to form lactocaramel.
Solubility: lactitol is extremely soluble in water and slightly soluble in ethanol. The pH of 10% lactitol aqueous solution is 4.5~8.5. The solubility and viscosity of lactitol at room temperature are similar to that of sucrose, but its solubility at low temperature is lower than that of sucrose. In addition, when lactitol is dissolved, it not only does not emit heat, but also absorbs heat.
Stability: lactitol has strong stability, and can still maintain its stability under acid, alkali, light and high temperature conditions.
