What is L-Methionine?
L-methionine, also known as L-methionine, is the levoform of methionine, chemical formula is C₅H₁₁NO₂S, chemical properties are colorless or white shiny flake crystal or white crystalline powder, with a special smell, taste slightly bitter. The melting point was 280-281 ºC. It is labile to strong acids and can lead to demethylation. "Dissolved in water (5.6g/100mL,30 ° C), warm dilute ethanol, alkaline solution or dilute inorganic acid." It is poorly soluble in ethanol.

L-Methionine, an organic compound, is one of the essential amino acids in the human body. It has optical activity and participates in protein synthesis.
Since it cannot be produced in the body itself, it must be obtained from the outside. If methionine is deficient, protein synthesis in the body will be blocked, resulting in body damage. Excessive oxidation of membrane lipids caused by oxygen free radicals in the body is the cause of various body damages. Lipid peroxides can damage the primary and secondary lysosomal membranes, causing the release of acid phosphatase contained in the lysosome as hydrolysis, and causing damage to important organelles such as cell and mitochondrial membranes. Application of L-Methionine:
1. Mainly used as a nutritional supplement. It has the same physiological effect as L-methionine, but the price is low (L-type is made from DL-type), so DL-methionine is generally used. "It is a limiting amino acid in plant foods such as oat, rye, rice, corn, wheat, peanut flour, soybean, potato, spinach, etc." Added to the above foods to improve amino acid balance.
