Black rice is an annual herb of the genus Oryza in the Gramineae family. Black rice is black or dark brown, with long oval shaped grains and grayish brown rice husks. Its roots, leaves, shells, skins, embryos, and endosperm are all colored or purple. Once a year, rice husks are opened in autumn. Black rice, also known as black japonica rice, derives its name from the dense deposition of pigment in the pericarp layer, which is black and purple.
