DL tartaric acid, also known as 2,3-dihydroxysuccinic acid, has a molecular formula of C4H6O6NH2O (crystalline: n=1, anhydrous: n=0). It appears as colorless crystals or white crystalline powder, odorless, and has a sour taste. It is a mixture of equal amounts of right-handed and left-handed tartaric acid, often containing one or two crystalline waters, which lose water when heated to 100 ° C. Stable in air, density 1.6, solubility in water 20.6 (20 ° C), solubility in ether about 1%, solubility in ethanol 5.01 (25 ° C). Widely used in the food industry, such as as as a beer foaming agent, food acidifier, flavoring agent, for refreshing beverages, candies, juices, sauces, cold dishes, fermentation powders, etc. Its acidity is 1.3 times that of citric acid, especially suitable as an acidifier for grape juice.
