What is Ethyl maltol?

Ethyl Maltol is an organic compound that is a common flavourant in some confectioneries. It is related to the more common flavorant maltol by replacement of the methyl group by an ethyl group. It is a white solid with a sweet smell that can be described as caramalized sugar and cooked fruit.

The main methods are fermentation, sugar alcohol chlorination and sugar aldehyde. 1. By fermentation, kojic acid is obtained from starch fermentation, and then ethyl maltol is obtained through etherification, oxidation, debenzylation, decarboxylation, hydroxylation and reduction. 2. Sugar alcohol chlorination Sugar alcohol is oxidized with  (or with  oxidation), heated and decomposed to caramic acid, and then reacted  to reduce to ethyl maltol. 3. Furfuryl acetone was prepared by the reaction of furfural with ethyl Grignard reagent, and then oxidized , and then hydrolyzed to produce ethyl maltol.
