Physical and chemical properties

• Appearance: Generally white or yellowish amorphous powder, with good fluidity, fine feel, no visible impurities.

• Solubility: It has good water solubility, can dissolve quickly in cold water, form a uniform solution, and the solubility is relatively stable at different temperatures.

• Sweetness: The sweetness of maltodextrin is low, generally about 5%-20% of the sweetness of sucrose, almost no sweetness, and will not have a greater impact on the overall sweetness of the product when used in food.

Hygroscopicity: There is a certain hygroscopicity, in high humidity environment may absorb moisture in the air and caking, so it needs to be stored in a dry environment.

Functional characteristics

• Thickening and stabilizing effect: It can be used as a thickening agent in food, which can increase the viscosity of food, improve the taste and texture of food, make the product have better stability, and prevent the phenomenon of stratification and precipitation.
