Product Detail

Appearance: White to light brown yellow amorphous powder. Soluble in water, the aqueous solution is colorless to pale yellow, sometimes milky, insoluble in ethanol, chloroform, and ether. It is a glycoprotein. The main principle of action is to hydrolyze polypeptides into low molecular weight peptides. There are also the effects of hydrolyzed amide group bonds and esters. The molecular weight is about 33,000, the pH value of the isoelectric point is 9.35, the optimal pH value is 6 ~ 8, and the optimal temperature is 55℃.

Use: enzyme preparation. It is mainly used for cold resistance of beer (hydrolysis of protein in beer to avoid turbidity caused by refrigeration); Meat softening (hydrolyzing muscle protein and collagen to tenderize meat); Pre-cooking cereal preparation; In the production of hydrolyzed proteins, as well as in bread, poultry, wine, etc.
If the activity unit is 400,000 units /g, the addition amount is about 0.8 ~ 1.2mg/kg.
Uses: As a drug, suitable for all kinds of acute and chronic inflammation and edema; Inflammation caused by wound healing after surgical trauma or surgery, fracture or dislocation, edema, hematoma, asthmatic bronchitis, pneumonia, pulmonary abscess, osteomyelitis, arthritis, cellulitis, pyelonephritis, thrombovasculitis, and other inflammatory and swollen diseases. As a food processing aid, it is mainly used for cold resistance of beer, meat softening, various types of pre-cooking preparation, and the production of hydrolyzed protein.
Production methods Take fresh and clean pineapple skin, thorn, core and other juice yield of more than 45% of the waste, press, extract juice filter fruit crumbs. The filtrate was added with 0.025-0.05% benzoic acid and 5% kaolin for adsorption. The kaolin adsorbent was adjusted to pH6.7-7.0 with saturated sodium carbonate solution, then 5% sodium chloride was added, and then pressed and filtered after stirring. Take the filtrate and adjust pH4.8-5.1 with hydrochloric acid, add ammonium sulfate, stand for precipitation, take the precipitation and dry under pressure, that is, bromelain. The yield of pineapple scraps was 0.054-0.103%.
Production method "" is obtained from the fruit and stem of pineapple (Ananas comoslgs and A. racteatus) (mainly using the outer skin) by pressing and extracting, salting out (or acetone, ethanol precipitation) and then separating and drying.
