Sodium benzoate is an organic substance, chemical formula C7H5NaO2, is a white granular or crystalline powder, odorless or microbenzoin odor, slightly sweet, astringent taste, relative molecular mass of 144.12, stable in air, soluble in water, its aqueous solution pH value of 8, soluble in ethanol.
Benzoic acid and its salts are broad-spectrum antimicrobial agents, but their antimicrobial effectiveness depends on the pH of the food. With the increase of acidity of the medium, its bactericidal and bacteriostatic effect is enhanced, while in the alkaline medium, it loses bactericidal and bacteriostatic effect. The optimal pH value of its anticorrosion is 2.5~4.0.

GB 2760-2002: Equivalent to "07001, Benzoic Acid." For gum-based products, the limit is GMP (Benzoic Acid). For pre-mixed wine, the limit is 0.2 g/kg.
FAO/WHO (1984, mg/kg): Margarine, table olives, jams and jellies, pickles, concentrated pineapple juice with preservatives: 1000 (when used alone or in combination with acids, sorbates, their salts, and sulfites, provided that sulfites do not exceed 500 mg/kg; for manufacturing purposes only). Mango jam: 250 mg/kg. Frozen fish fillets, fish products, and fish fillings: GMP.
