Maltit  is a white crystalline powder or a colorless, transparent, neutral, viscous liquid. Its dilute solution has a strawberry aroma and a sweetness that is 75% to 95% of sucrose, resulting in a pure sweetness. It is readily soluble in water.It is highly hygroscopic and exhibits excellent heat resistance. When heated at 1.0°C for 1 hour, the pH value is between 3 and 7, showing no change. It is highly stable and does not undergo browning reactions when coexisting with proteins or amino acids.
