Solubility: Very soluble in water, slightly soluble in eth-anol, and insoluble in ace-tone.
Stability: Stable in aqueous solutions with a pH of 1.8-10 and acid-stable, but susceptible to denaturation and loss of sweetness at high temperatures (e.g., 80-100°C).
