Ascorbic acid glucoside, also known as VC glucoside, has the scientific name O-A-D-pyranosy-L-ascorbic acid (2-O-A-D-glucopyranosy-L-ascorbic acid, abbreviated as AA-2G), and is a derivative of VC. The relative molecular mass is 338.27, and the melting point is 158.5 to 159.5℃. Due to the disadvantages of VC such as poor stability and easy oxidation, ascorbic acid glucoside, an alternative product of VC, has been derived. It can replace VC as an acidulant, reducing agent, antioxidant, bleaching agent and stabilizer, and is widely used in cosmetics, food and medicine fields.
