Royal jelly acid is a kind of organic acid isolated from royal jelly. Its molecular formula is c10h18o3, which is called 10-hydroxydec-2-enoic acid (abbreviated as 10-HDA) is one of the important components of royal jelly. It is a special unsaturated organic acid. Many properties of royal jelly, such as odor and pH value, are related to it. Because this acid does not exist in other substances in nature, it only exists in royal jelly, so it is also called royal jelly acid. 10-hydroxydec-2-enoic acid is one of the important indexes of royal jelly quality, which generally ranges from 1.4% to 2.4%, accounting for more than 50% of the total fatty acids. The isolated pure royal jelly acid is white crystal, and mostly exists in free form in fresh royal jelly.
