Natamycin - nearly white or creamy yellow crystalline powder. It is a odorless, tasteless, low dose and high safety food preservative. Natamycin is a white to milky, odorless, tasteless crystalline powder produced by the controlled fermentation of Streptomyces natamycin, usually in the form of enol. Its mechanism of action is that it binds to ergosterol and other sterol groups of fungi to block ergosterol biosynthesis, thereby distorting the cell membrane, resulting in leakage and cell death. Surface treatment of dough with natamycin in baking foods has a significant effect on extending shelf life.
