      Trehalose  


    Trehalose is a multi-functional sugar. Its mild sweetness (45% sucrose), low cariogenicity, low hygroscopicity, high freezing-point depression, high glass transition temperature and protein protection properties are all of immense benefit to food technologists.


    Trehalose is fully caloric, has no laxative effects and after ingestion is broken down in the body to glucose. It has a moderate glycemic index with low insulinemic response.

    In Vietnam's food processing and animal feed industry, the trend towards using natural, stable, and cost-competitive raw materials is increasingly prioritized.     Trehalose is a natural disaccharide with a mild sweetness, only 45% that of cane sugar (sucrose), but possesses superior properties not found in all sugars: moisture retention, anti-crystallization, protein structure stability, antioxidant properties, and product protection during freezing. In particular, the corn source provides consistent quality, traceability, and optimal cost – a clear competitive advantage for manufacturers in Vietnam.

    Below are the key applications of Trehalose in the Vietnamese market, along with recommended addition rates to help you easily apply it to your production line.

    1. Bakery, Confectionery & Ice Cream Industry

    High-purity, colorless, and odorless Trehalose extracted from corn is ideal for partially replacing cane sugar without altering the product's characteristic flavor.

    Specific applications: Production of bread, sponge cakes, mochi, cookies, jam fillings, ice cream, sorbet, and various beverages. Trehalose helps retain moisture, extend shelf life, maintain the soft and fluffy texture of baked goods, prevent sugar crystallization in jams and ice cream, and create a smooth texture for ice cream products.

    Recommended usage rate:

    Cakes, cookies, mochi: Replace 10% – 25% of the total sugar (sucrose) in the recipe.

    Fillings, fruit jams: Add 15%–30% of the total sugar.

    Creams, sorbets: Add 20%–40% of the total sugar to reduce ice crystals, create a glossy and smooth texture.

    Meringues: Can replace up to 100% of sugar to create a crispy texture and stabilize air bubbles.

    2. Seafood & Meat Processing

    This is one of the most highly valued applications in Vietnam, especially in the seafood export industry. Trehalose from corn has superior protein protection capabilities, minimizing structural and moisture losses during freezing and cold storage.

    Specific applications: Production of surimi (fish cakes), fish balls, shrimp balls, sausages, smoked meat, and other processed meat products. Trehalose helps retain water, reduce drip loss, eliminate fishy odors, and preserve the natural elasticity and texture of the ingredients.

    Recommended usage rates:

    Surimi and fish cakes: This is the most optimal application. Add 2.5% – 10% Trehalose by weight of the product (typically 5% – 8% in industrial production). Studies show that adding 8% Trehalose helps maintain the gel-forming ability of surimi, reducing it by only 9% after 24 weeks of freezing, while the control sample reduced it by 62.8%.

    Meat products (sausages, meatballs): Approximately 1.5 teaspoons (~5-6g) per 0.45kg of meat, equivalent to about 1% – 3% of the meat's weight.

    Frozen shrimp: A 2%–5% Trehalose solution can be sprayed onto the surface before freezing to create a protective film, preventing head breakage and discoloration.

    3. Animal Feed & Aquaculture

    Trehalose is not only a food ingredient but is also recognized as an effective natural prebiotic and immune stimulant, particularly suitable for Vietnam's rapidly developing agriculture and aquaculture.

    Specific applications: Added to feed for tiger shrimp, whiteleg shrimp, catfish (major farmed species), and poultry (broiler chickens, laying hens). Trehalose helps strengthen immunity, improve survival rates, and support digestion and nutrient absorption.

    Recommended Dosage:

    Shrimp Feed: Experimental studies on whiteleg shrimp indicate that the optimal supplementation level is 1g Trehalose/kg feed (equivalent to 0.1%), resulting in the highest weight gain, survival rate, and disease resistance.

    Laying Chicken Feed: Supplementation from 0.05% – 1.00% to the daily diet, with 1.00% showing the most significant effect on egg weight, shell thickness, and feed conversion efficiency.

    Piglet Feed (weaning stage): Supplementation of 0.5% – 1.5% to reduce stress, enhance gut immunity, and limit diarrhea.

    4. Cosmetics & Personal Care – Additional Applications

    Beyond its main applications, corn-derived Trehalose, with its natural hygroscopic and moisturizing properties, is also favored in moisturizers, sunscreens, and skin protection products.

    Applications: Moisturizers, cleansers, masks, sunscreens.

    Recommended usage rate: Add 0.5% – 5% to the total product formula, depending on the desired level of hydration.
