In 1909, while studying ergot fungi that damage rye grains, Charles Tanret isolated a unique crystalline sulfur‑containing compound. He subsequently named this water‑soluble thiol ergothioneine after the ergot fungus. EGT is widely found in microbial cells, animals and plants, and is present at relatively high levels in foods such as mushrooms, black beans, red beans and oats.
