Theanine

Theanine is a characteristic amino acid in tea leaves. It is synthesized in the roots of tea plants from glutamic acid and ethylamine under the catalysis of theanine synthetase. As a vital substance shaping tea taste, it mainly delivers umami and sweet sensations and serves as the primary component responsible for the refreshing and mellow‑sweet mouthfeel of tea. Twenty‑six amino acids (including six non‑protein amino acids) have been identified in tea leaves, generally accounting for 1%‑5% of tea dry weight, among which theanine makes up over 50% of the total free amino acids in tea.

Tea plant amino acids refer to all 26 amino acids present in tea leaves. Twenty of them are protein‑related amino acids known as protein amino acids; the other six are irrelevant to protein synthesis and are termed non‑protein amino acids. These six non‑protein amino acids are of greater significance in tea, and theanine ranks foremost among them. Therefore, theanine is one of the amino acids and is recognized as the characteristic amino acid of tea.

As the most abundant characteristic non‑protein amino acid in tea, theanine is safe with no toxic side effects. It possesses multiple biological activities including antioxidant effects, immune regulation, anti‑aging properties, and antagonism against cellular excitotoxicity induced by excessive glutamic acid. Meanwhile, as an alkylamine, L‑theanine can activate γ‑T immune cells to boost cell proliferation and cytokine secretion, strengthen the body’s capacity to resist tumor cells, reduce infections by exogenous microorganisms, and lower the risk of catching colds and influenza.
