Product Overview
Citric acid (anhydrous) is a naturally occurring tricarboxylic acid widely used as an acidulant, chelating agent, and pH buffer in food, pharmaceutical, and industrial applications. It is supplied at ≥99.5% purity as colorless translucent crystals or white granules/powder. Citric acid is highly soluble in water (59 g/100 mL at 20°C) and is a key intermediate in the Krebs cycle.

Synthetic Process
Citric acid is produced industrially by fermentation of carbohydrates (such as starch, molasses, or glucose) using Aspergillus niger, followed by separation, purification, and crystallization to obtain anhydrous or monohydrate forms.

Mechanism of Action
As a tricarboxylic acid, citric acid functions as a proton donor (acidulant) and a chelating agent that complexes metal ions such as Fe³⁺ and Ca²⁺. Its chelating action is utilized in cleaning applications to remove metal oxide deposits. In biological systems, citrate is a key metabolic intermediate and acts as a calcium chelator with anticoagulant properties.
