    Cinnamaldehyde is the main component in cinnamon oil and cassia oil. For example, cinnamon oil contains 70% to 75%, while cassia oil contains 80% to 95%. It is also present in cinnamon leaves, cinnamon bark, patchouli, celery seeds, lemon balm, rose oil, hyacinth oil, etc. Cinnamaldehyde is soluble in liquid sulfur dioxide and turns red, insoluble in liquid ammonia and turns yellow. Its concentrated sulfuric acid solution is orange. Hydroquinone, catechol, and catechol phenol can strongly inhibit its auto-oxidation reaction. Under ultraviolet light and heated at 100-120℃ for 8 days, it can polymerize and form cis-cinnamic acid. When reacting with sulfonyl chloride, it releases chlorine gas and sulfur dioxide, generating α,β-dichloro-β-phenyl cinnamaldehyde. In ethanol, it can be co-boiled with hydrogenated lithium aluminum or react with isopropanol aluminum to obtain phenylpropanol. Purpose

It is found in large quantities in plants such as cinnamon. Its molecular formula is C9H8O, molecular weight is 132.16, melting point is -7.5℃, boiling point is 253℃ (normal pressure), refractive index is 1.619-1.623 (20℃), and density is 1.046-1.052. Cinnamaldehyde is insoluble in water and glycerin, but easily soluble in organic solvents such as alcohol, ether and petroleum ether.
