      Product Detail

White crystals or crystalline powder. Sweet, with about 70% of the sweetness of sucrose. Odorless or with a slight characteristic smell. Relative density d 4 201.525 (with water). Has reducing properties and is dextrorotatory. There are two isomers, α-type and β-type.

α-lactose can be broken down into glucose and galactose by acids and lactase, and can be converted into lactic acid by lactic acid bacteria, but yeast cannot use it.

    Air and Water Reactions:

    Water soluble.

    Reactive Group:

    Alcohols and Polyols

    Reactivity Profile:

Flammable and/or toxic gases are generated by the combination of alcohols with alkali metals, nitrides, and strong reducing agents. They react with oxoacids and carboxylic acids to form esters plus water. Oxidizing agents convert them to aldehydes or ketones. Alcohols exhibit both weak acid and weak base behavior. They may initiate the polymerization of isocyanates and epoxides.
