Description

White to yellow liquid; oily, citrus odor. Soluble in alc, fixed oils; insoluble in water. 2-Tridecenal has a very strong, citrus-peel, waxy odor with a bittersweet taste.

It is formed by the condensation of undecyl aldehyde and acetaldehyde with sodium amide in ether.

Uses

spices. Mainly used to prepare citrus flavors.

2-Tridecenal is used in minute amounts in flavor compositions, mainly of the Citrus type, but also in fruit complexes, where it introduces great power, diffusion and lift to the aroma, reviving an overly sweet Citrus complex, etc. The concentration in finished products is normally very low, about 0.1 to 8 ppm.
