Glycerides, C10-18 Use and Manufacturing
It is formed by esterification of all saturated 1, 3-diglycerides (from palm oil) and anhydrous food grade oleic acid in the presence of the catalyst trifluoromethanesulfonic acid. Or it is formed by transesterification of partially saturated 1, 2, 3-glyceride and stearyl ethyl ester in the presence of appropriate food grade lipase.
Coating agent (sugar, table salt, vitamins, citric acid, succinic acid, spices, etc.); molding aids; tissue improvers.
