Coriander oil is obtained by steam distillation of ripe fruits of Coriandrum
sativum L. (Apiaceae). It is an almost colorless to pale yellow liquid with a characteristic
odor, reminiscent of linalool.

It is made from the ripe fruits of Corin drum sativum (also known as coriander and parsley), which are the first and second annual herbs of Umbelliferae. They are dried and crushed and then steam distilled. The yield is about 0.4% to 1.1%. It is mainly produced in Eastern Europe and Central Europe such as Hungary and the former Soviet Union.
