Potassium pyrophosphate is a white, crystalline powder that exhibits a high degree of solubility in water. This substance is essentially a salt, comprised of potassium ions and pyrophosphate ions. Salts, basic, such as POTASSIUM TETRAPYRO PHOSPHATE, are generally soluble in water. The resulting solutions contain moderate concentrations of hydroxide ions and have pH's greater than 7.0. They react as bases to neutralize acids. These neutralizations generate heat, but less or far less than is generated by neutralization of the bases in reactivity group 10 (Bases) and the neutralization of amines. They usually do not react as either oxidizing agents or reducing agents but such behavior is not impossible.

Excerpt from ERG Guide 151 [Substances - Toxic (Non-combustible)]: SMALL FIRE: Dry chemical, CO2 or water spray. LARGE FIRE: Water spray, fog or regular foam. Move containers from fire area if you can do it without risk. Dike fire-control water for later disposal; do not scatter the material. Use water spray or fog; do not use straight streams. FIRE INVOLVING TANKS OR CAR/TRAILER LOADS: Fight fire from maximum distance or use unmanned hose holders or monitor nozzles. Do not get water inside containers. Cool containers with flooding quantities of water until well after fire is out. Withdraw immediately in case of rising sound from venting safety devices or discoloration of tank. Excerpt from ERG Guide 151 [Substances - Toxic (Non-combustible)]: Ensure that medical personnel are aware of the material(s) involved and take precautions to protect themselves. Move victim to fresh air. Call 911 or emergency medical service. Give artificial respiration if victim is not breathing. Do not use mouth-to-mouth method if victim ingested or inhaled the substance; give artificial respiration with the aid of a pocket mask equipped with a one-way valve or other proper respiratory medical device. Administer oxygen if breathing is difficult. Remove and isolate contaminated clothing and shoes. In case of contact with substance, immediately flush skin or eyes with running water for at least 20 minutes. For minor skin contact, avoid spreading material on unaffected skin. Keep victim calm and warm. Effects of exposure (inhalation, ingestion or skin contact) to substance may be delayed. (ERG, 2016)

Potassium pyrophosphate Use and Manufacturing

Methods of Manufacturing

The neutralization calcination method uses the ratio of 1 mol phosphoric acid to 2 mol potassium hydroxide. First, add 30% phosphoric acid to the neutralizer, and slowly add potassium hydroxide solution under stirring to neutralize the reaction, and control the pH at 8.4 Preferably, the reacted solution is heated, and activated carbon is added for decolorization. The insoluble matter is removed by filtration, and then concentrated by evaporation. Then, it is cooled and crystallized and centrifuged to obtain dipotassium hydrogen phosphate, which is heated to 120~130℃ to remove the crystal water. To form anhydrous dipotassium hydrogen phosphate, calcining and polymerize it at a high temperature of 500-600°C for about 2 to 3 hours, and then cool it to obtain a finished product of potassium pyrophosphate. When H3P04+2KOH→K2FIPO4+2H2O2K2HPO4[△]→K4P2O7+H2O makes the finished product potassium pyrophosphate react with 0.1mol/L silver nitrate solution, it is qualified that there is no silver yellow orthophosphate.

It is used as an emulsifier, texture improver, chelating agent in the food industry, and as a raw material for alkaline water for noodle products. It is often used in combination with other condensed phosphates.
