Research progress on production and application of guar gum
Guar gum, also known as guar gum and guar gum, is currently one of the cheapest and widely used hydrophilic colloids in the world. It comes from India, Pakistan and other places. Guar gum has strong water absorption properties, has good solubility in cold and hot water, has a wide range of stable viscosity, and has good water solubility and cross-linking properties. It can be widely used in food, petroleum, Daily chemical, paper, textile, construction, medicine, ceramics and other industries.
Production of guar gum
Guar gum is produced through careful and specialized technical processing, including seed selection, planting layout, seed collection and processing, all with a set of scientific methods. The production process of guar gum, in short, is to separate and grind the beans into a powder through a series of operations such as crushing, sieving, and grinding, and then to remove the valuable guar gum from the soybean flour seperate. The influence of processing technology on the performance and economic value of guar gum is often held as a valuable patent document by many guar producers.
Guar gum classification
Food grade
General industrial purification technology can be used to obtain endosperm that is not very pure but basically meets the requirements. Due to the imperfection of purification technology itself, there may be a small amount of epidermis and sprouts. This impurity slightly weakens the effective use value of the gum, but does not impair the suitability of guar gum as a food additive because the entire seed is edible.
Industrial grade
Most guar sold in industrial applications has the same purity as food-grade guar. However, industrial grade guar gum makes extensive use of chemical additives for special purposes to improve and control such as swelling speed viscosity and solution stability. These additives can control gelation and control viscosity. Processing technology can also control dispersion, hydration speed and viscosity. When these process technologies are combined with chemical additives, they can produce typical special products with historical significance.
Research progress
Guar gum is widely used in the food industry because of its stable source and low price. In addition, commercial guar gum derivatives have also been available for a long time. Chemical modification can change the properties of guar gum in the dispersion state of the solvent and the transparency of the solution. In addition to hydrolyzed guar gum, the products include ionic sodium carboxymethyl guar gum (CMG, sodium carboxymethyl hydroxypropyl guar gum) and non-ionic hydroxypropyl guar gum (HPG) And guar gum phosphate) and so on. This is because the structure of guar gum contains many hydroxyl groups (each sugar monomer contains an average of three hydroxyl groups), and it is easy to perform etherification and esterification reactions through the hydroxyl functional groups.
In recent years, the chemical modification has greatly improved the dispersion, viscosity, hydration speed, and solution transparency of guar gum. Although these derivatives are not currently approved for use in food, some of them may be approved for use in food in the future. The research and development of guar gum derivatives have made guar gum derivatives an important component in the production of guar gum. Guar gum production enterprises at home and abroad are strengthening the development of guar gum products, indicating that this thickener has broad development prospects.
