WellVine, a functional ingredient startup launched in 2020, is making waves in the health and wellness space by repurposing Chardonnay by-products from the wine industry into a cutting-edge gut health supplement. Originally conceived as a culinary addition to their winery in Sonoma County, California, the venture took an unexpected turn when safety testing uncovered the health-enhancing properties of Chardonnay grapes. The surplus fruit from wine production, which initially posed a challenge, evolved into an opportunity in the supplements sector.


Collaborating with the USDA Agricultural Research Service (ARS), the University of Tennessee, Iowa State University, and the University of California Davis (UC Davis), WellVine explored the health benefits of Chardonnay grapes. Scott Forsberg, Chief Operating Officer at WholeVine Products, notes that extensive research consistently ranked Chardonnay highest in various tests, particularly in measures of gut health.


In 2020-2021, Dr. Daniella Barilla from UC Davis uncovered the unique profile diversity of Chardonnay oligosaccharides, a source of prebiotic fiber. Forsberg highlights that Chardonnay oligosaccharides exhibit a more diverse profile than those found in mother's milk, making them a valuable resource.


WellVine has developed a proprietary process to transform grape marc, a by-product of winemaking, into a nutrient-packed "superfood" with antioxidants, fiber, and natural sweetness. Rich in oligosaccharides, polyphenols, flavanols, and catechins, this upcycled ingredient forms the core of their innovative supplement.


Sonomaceuticals has demonstrated the viability of this upcycling model with the launch of Vine to Bar, a line of branded chocolate products incorporating WellVine Coastal Chardonnay Marc. This product not only delivers on consumer sensory expectations but also aligns with environmental sustainability goals and offers health benefits, including increased gut-healthy fiber and cardiovascular-healthy flavanols.


As interest in upcycled products grows, WellVine stands out by utilizing 100% of the biomass from the wine press, minimizing waste streams. While other companies may focus on specific components of biomass, WellVine's holistic approach ensures a comprehensive utilization of resources, emphasizing both sustainability and nutritional efficacy.
