Blue from the Rainforest: EFSA Greenlights Natural “Jagua Blue” as Safe Food Colorant
Move over synthetic dyes—nature’s palette just got a vibrant new shade of blue. On December 1, 2025, the European Food Safety Authority (EFSA) delivered a landmark scientific opinion approving jagua (genipin-glycine) blue as a safe food additive, opening the door for this striking natural colorant to splash its deep indigo hues across everything from candies to beverages.
Derived from the unripe fruit of Genipa americana L.—a tree native to Central and South American rainforests—jagua blue isn’t simply extracted; it’s crafted through chemistry inspired by tradition. Indigenous communities have long used jagua fruit juice for body art, which darkens to blue-black upon exposure to air. Modern food science replicates this transformation in a controlled way: the pulp is water-extracted, then genipin, a natural iridoid compound in the fruit, reacts with added glycine (an amino acid) to form a stable, blue-colored polymer—the active coloring agent.
Unlike many artificial blues (like Brilliant Blue FCF), jagua blue offers a clean-label, plant-based alternative that aligns with consumer demand for natural ingredients. But novelty alone doesn’t guarantee approval. EFSA’s Panel on Food Additives and Flavourings (FAF) subjected it to rigorous scrutiny—and the results were reassuring.
Toxicological testing was comprehensive: acute, sub-chronic, and even a 12-month repeated-dose study—including exposure during pregnancy—showed no adverse effects, even at the highest dose tested (3,385 mg per kg of body weight per day). Crucially, jagua blue was not genotoxic, meaning it doesn’t damage DNA. While some studies noted harmless but noticeable effects—such as green-colored urine and temporary organ discoloration due to pigment deposition—these were deemed non-toxic and reversible, evidence of limited but real absorption.
Based on this robust dataset, EFSA established an Acceptable Daily Intake (ADI) of 34 mg/kg body weight per day (or 12 mg/kg bw per day when expressed as the pure blue polymer, assuming 40% content in the additive). Even under conservative high-consumption scenarios, estimated exposure remained well below this threshold: ranging from 1 mg/kg bw per day in the elderly to 27 mg/kg bw per day in toddlers—still under the ADI across all age groups.
This margin of safety is particularly significant given that toddlers are often the highest consumers of colored foods like snacks and drinks. The fact that even their upper-percentile intake stays within safe limits underscores EFSA’s confidence in the additive’s profile.
One fascinating detail: although an in vitro Caco-2 cell test suggested low intestinal permeability, the appearance of green urine confirmed that some components are absorbed, prompting thorough investigation—which ultimately reinforced safety rather than raising alarms.
With this opinion, jagua blue joins a growing wave of botanically derived colors replacing petroleum-based dyes in Europe’s food supply. Its rich, stable blue—once reserved for ceremonial tattoos—is now poised to become a staple in vegan gummies, dairy-free yogurts, and natural ice creams.
EFSA’s conclusion is clear and decisive: there is no safety concern for jagua (genipin-glycine) blue as a food additive at the proposed uses and use levels.
In a world hungry for both beauty and sustainability, this rainforest-born blue proves that sometimes, the safest innovations aren’t invented—they’re rediscovered.
