Properties: white monoclinic or six square crystal or crystalline powder. Odorless, with a special sweetness. Soluble in water, slightly soluble in ethanol, insoluble in acetone, ethyl ether.
Use:
1. Food grade glycine is mainly used as nutritional supplement and food additive. Seasoning: used in combination with alanine for alcoholic beverages. Because it can be a certain degree of shrimp, cuttlefish flavor, can be used for sauces. Antisepsis: it has certain inhibitory effect on the Bacillus subtilis and Escherichia coli, so it can be used as the preservative of surimi products and peanut butter. Buffering effect: because glycine is an amphoteric ion with amino group carboxyl group, it has strong buffering property. It can buffer the taste of salt and vinegar. Antioxidant effect (using its metal chelating effect): added to cream, cheese, margarine can extend the shelf life of 3~4 times.
