Description

Magnesium Chloride

Magnesium chloride is a kind of inorganic substance, chemical formula MgCl2, molecular weight of 95.211, colorless flake crystal, slightly soluble in acetone, water, ethanol, methanol, pyridine. It is deliqued in wet air with smoke, and sublimed in white heat in a stream of hydrogen gas.

1, curing agent; Nutritive fortifier; Flavoring agent (used with magnesium sulfate, salt, calcium hydrogen phosphate, calcium sulfate, etc.); A leavening agent, such as sake; Dewatering agent (for fish cake, dosage 0.05% ~ 0.1%); Tissue improver (used in combination with polyphosphates as an elastic enhancer for surimi products). Due to strong bitter taste, the usual dosage is less than 0.1%;

2, wheat flour treatment agent; Dough quality improver; Oxidizing agent; Fish can modification agent; Maltose treating agent.

Storage and transportation temperature: 2-8℃. [4] Store in a cool, dry and well-ventilated warehouse. Keep away from fire and heat. Packaging must be completely sealed to prevent moisture absorption. physico-chemical property	It is a colorless, odorless, small, granular, blocky monoclinic crystal system with bitter taste. There are two kinds of salt, dihydrate and hexahydrate. Dihydrate salt is white absorbent small particles. Anhydrous salt is achromatic flake or crystal. At room temperature, it is hexahydrate salt, and the water content can change with the temperature. At 100℃, 2 molecules of crystalline water are lost, and at 110℃ part of hydrochloric acid gas is released, which is decomposed into oxygen-containing magnesium chloride at high temperature. The relative density is 1.569, and the aqueous solution is neutral (pH is 7.0). It absorbs moisture very easily. Easily soluble in water (160g/100ml, 20℃), soluble in ethanol. Anhydrous magnesium chloride is a colorless hexagonal crystal with a relative density of 2.177 and a melting point of 708℃.
