Potassium sorbate, the potassium salt of sorbic acid, white to light yellow scaly crystals, crystal granules or crystal powder, odourless or slightly odorous, easily absorbed by moisture and discoloured by oxidation when exposed to air for a long time. Soluble in water, soluble in propylene glycol and ethanol. It is often used as a preservative, destroying many enzyme systems by binding to the sulfhydryl groups of microbial enzyme systems. Potassium sorbate is fully preservative in acidic media and less so in neutral conditions.
