A very important spice, used for soap essence, is also the raw material for synthesizing vitamin A.

Found in various plants such as violets. It is prepared by condensation of citral and acetone in a dilute caustic solution, followed by cyclization with sulfuric acid or phosphoric acid.

β-Ionone has a characteristic violet-like odor, more fruity and woody than α-ionone clear slightly yellow to yellow liquidβ-Ionone has a characteristic violet-like odor, more fruity and woody than α-ionone. May be prepared by condensing citral with acetone to form pseudoionone, which is then cyclized by acid-type reagents.Colorless to light yellow liquid with an odor of cedar wood. In very dilute alcoholic solution the odor resembles odor of violets. Used in perfumery.
