What is  D- Sodium Isoascorbate?

Sodium D-isoascorbate, also known as sodium gibberellic acid, is a new biological food antioxidant, preservative and color aid. It can prevent the formation of nitrosamine, a carcinogen in pickled products, and eradicate the discoloration, peculiar smell and turbidity of food and beverages. It is widely used for preservation and color aid of meat, fish, vegetables, fruits, alcohol, beverages and canned food.

Functions of  D- sodium Isoascorbate:
 Sodium erythorbate (C6H7NaO6) is a food additive used predominantly in meats, poultry, and soft drinks. Chemically, it is the sodium salt of erythorbic acid. When used in processed meat such as hot dogs and beef sticks, it increases the rate at which nitrite reduces to nitric oxide, thus facilitating a faster cure and retaining the pink coloring. As an antioxidant structurally related to vitamin C, it helps improve flavor stability and prevents the formation of carcinogenic nitrosamines. When used as a food additive, its E number is E316. The use of erythorbic acid and sodium erythorbate as a food preservative has increased greatly since the U.S. Food and Drug .

Applications of  D- sodium Isoascorbate:
 1. In meat products: as a coloring aid, it can keep the color, prevent the formation of nitrosamines (such as nitrite), improve the flavor, and the incision is not easy to fade. Pickled vegetables: keep color and improve flavor.
2. Frozen fish and shrimp: keep the color and prevent the fish surface from oxidizing to produce rancid smell.
